Serving Styles: Pita, Plate, Tray and Bowl

Pita

The most common format. 150–200g of meat, two sauces, pickles and salad. Advantages: measured, portable, affordable.

Lafa

250–350g of meat in a single wrap. Advantage: holds more toppings and sauce. Drawback: cools fast and must be eaten immediately.

Plate

Meat served separately with hummus, salads, chips and bread on the side. The cleanest way to taste the meat itself, and suitable for low-carb eating.

Event tray

The group format. Common calculation: 180–250g raw meat per person, plus 2 pitas per person, 3–4 salads and at least 2 sauces.

Bowl

A contemporary version: meat over rice, bulgur or roasted vegetables. Popular in fast-casual kitchens and easy to control calorically.
